Chocolate banana muffins.

Let's start our day off with these warm muffins that're just out of the oven.

It's Sunday, so I would like to spend time longer in the bed. However, my stomach was screaming out loud to wake me up for a breakfast. I had been a week that I had cereal and yougurt , so I wanted to make my day a little bit different.

No fresh fruits but 2 angry bananas and a tub of yogurt in the fridge, so I decided to make chocolate banana muffins out of available ingredients on hand. It's pretty simple to prepare....just mix everything up by hand, nothing much to wash . Perfect choice for a lazy morning.

The muffins were baking in the oven while I could enjoy a warm shower. In about 25 minutes, I got the smiling muffins sitting in front of me to enjoy. My house's filled with the chocolate aroma...simple muffins.....simply delicious!

Come and enjoy the muffins with me or if you want to bake it yourself, here is the recipe.

Chocolate banana muffins

115 g all-purpose flour
1/2 tsp baking soda
15 g cocoa powder
pinch of salt
35 g granulated sugar
20 g brown sugar
1 large egg
65 g canola oil
50 ml mashed banana
70 ml yogurt
50 g chocolate chips or raisins.

1. Warm oven to 190C.
2.Sift together flour, baking soda, cocoa powder and salt. Make a well at the center.
3. Mix the remaining ingredients except chocolate chips together and then pour into a well. Use rubber spatula to mix the mixture to just combined. Stir in chocolate chips. Do not overmix.
4. Fill the batter about 3/4 cupful in each muffin cups and sprinkle some chocolate chips or raisins on top.
5. Bake 23-25 mins.

If you are not in a hurry like me, soak raisins in warm water for a while before use. I didn't do that!

I have made brownie so many times but one of the problem that I always fail to solve is how to cut it nicely. I know that it should be chilled until set before I cut it.....BUT nobody in my family including me can wait that long.

Mix and match........

It's always nice to wake up early in the morning to enjoy the day....especially when there are some flowers blooming in the garden waiting to say hi to us, right?
The idea of desserts today came from the garden....something sweet and something floral....lavender swiss roll.

It may sound like a strange flavor for swiss roll. I also wasn't sure it would be a nice combination. I never tried making any desserts using dried lavender buds before. Adding too much lavender powder, I would end up eating something that smells like candle or body lotion!

I chose to mix some dried lavender powder in the cake batter and matched with peach and whipping cream for the filling. I love the color combination of it. The final cake has a hint of lavender smell which is pretty nice. It really goes along well with peach.

Having a slice of this cake with a cup of tea or coffee is heaven. My guests love it as much as I do. Come and enjoy it with us!

Cocoa and lychee .....

Fresh fruit is the best, but what if it's not available?
Lychee is one of a few fruits that I seldom have a chance to eat them fresh. Whenever I think of lychee, I always think of it in the can!
I love the smell of lychee....it's sweet and unique. It always makes me think pink!

Swiss roll is one of my favorite cake to eat and the most favorite one to make. Besides the ease of making, it can be done in any flavor as long as I'm not out of imagination. Brown and pink would be nice, I thought.

It doesn't take much time to prepare swiss roll. I needed only 9 minutes (in my oven)to make this chiffon cake. The fun part for me is rolling.....I love to roll it.
To get a nice slice of swiss roll, we should put them in the fridge for a while before slicing them but I never had a chance to do that in our family.

I never thought that cocoa and lychee could be a perfect match.......They actually are. Love it....this combination is a keeper.
